The story
Cosme was built inside a former strip club — its floor and poles removed, the space remodeled in nine months into a minimalist room of white and gray, shelves lined with books and bottles. Enrique Olvera, who already ran Pujol in Mexico City, opened it on 21 October 2014, splitting his time between two cities and three other associates, staffing the kitchen mostly with people of Latino origin. The aim was elegance without stiffness, Mexican cuisine made from local ingredients. By 2021 it ranked 22nd among the world's best restaurants.
